3. Superfood Chili Bowls

A superfood chili bowl, that would supply lots of proteins and fibre, to keep me going! What I didn’t anticipate was that babies can get irritated if mommy eats lots of beans. I would not recommend this recipe, if you’re breastfeeding. If you’re not, please eat a bowl for me as well, as this was one of the best chilis I ever had!

7. Cauliflower Cranberry Superfood Salad

This vegan and gluten-free salad is super tasty and super good for you. It’s low in calories, high in fiber, and loaded with antioxidants from the dried cranberries, kale, cauliflower, and red onion.

I love adding dried cranberries to salads for a hint of sweet. Did you know a 1/2 cup of dried cranberries equals one serving of fruit? Cranberries contain the flavonoid (an antioxidant) proanthocyanidin, which helps to ward off urinary tract infections and may also help reduce the risk of cardiovascular disease.

8. Trail Mix Superfood Granola Bars

The season of outdoor adventures and fun in the sun is upon us! I wanted to make a nutrient-dense energy bar that’s easy to pack on hikes, road trips or picnics. If you’ve ever read the ingredients on store-bought granola or protein bars, you’ve probably noticed a list as long as your arm of words that are difficult to pronounce. Huge red flag for me! These granola bars contain only plant-based, wholesome ingredients in their purest form. Also, in the interest of convenience, they don’t require baking (asides from the quinoa which I lightly toasted for ten minutes).

9. Superfood Chocolate Banana Smoothie

I call this Superfood Chocolate Banana Smoothie because it is packed with superfoods like ground flaxseed and chia seeds. Both flaxseed and chia seed are anti-inflammatory, rich in fiber, protein and Omega 3.

I also added ripe bananas, cacao nibs (which is also a superfood), cocoa powder and spinach. I wanted to use kale, but spinach was the only thing I had. Of course, I added some liquid like water. You can use milk if you like. Hmmm, almond or cashew milk will be fantastic.

10. Superfood Stir-fry

It’s hearty and huge on flavor, yet it’s made with real, whole foods and packs a serious nutritional punch. On top of whole grain farro and lean chicken breast, I managed to work in FOUR vegetables, one of which is kale(!!), high fiber edamame, and plenty of anti-inflammatory ginger. Plus, everything is cooked in heart-healthy coconut oil. Hallelujah!

And y’all know me, I still gotta keep it easy so I am using a bottled dressing. This salad came together in minutes! Feel free to change it up to suit your tastes.
